Champagne Masterclass Dinner: Everything You Want To Know About Champagne

Corks will be popping on February 9th when we launch our first champagne experience of the year at 116 Pall Mall, presented by Martin Dibben, our Head of Champagne. Hosted in the private room of the champagne bar at 116 Pall Mall, you will be served a three-course dinner and a flight of champagnes that tell the story of champagne, the most famous wine in the world. 

Learn about the origins and the myths that surround the wine and its history. Understand the process of making the wine and how it can be created in several different formats from Blanc de Blanc, Brut, Demi-Sec and Rosé and hear about the characters associated with the bubbles.

For interest, we get you to taste the wine from different style of glass as well as tasting the difference between serving wine from bottle or Magnum.

The dinner ends with a dramatic demonstration of Sabrage – the art of opening a champagne bottle with a sabre – only seen in select hotels and restaurants approved to perform this ceremonial technique dating back to Napoleon.

Cornish hake ravioli, sea spinach, bottarga and lemon sabayon

Herdwick Lamb roasted loin, aubergine caponata, confit potato, capers, rosemary jus

Butternut squash saddleback, crispy kale, Jerusalem artichoke cream (v)

Almond and hazelnut tart, caramelised pear, vanilla brown butter ice cream (v)
