The Flavours of the Season: Autumn/Winter with Searcys
At 116 Pall Mall, hospitality is at the heart of everything we do. In partnership with Searcys, our catering team celebrates the very best of British seasonal produce, crafting menus that highlight the flavour, freshness, and provenance of ingredients from across the UK.
This autumn and winter, our chefs are showcasing a bounty of homegrown ingredients — from heritage apples and pears from Brogdale Farm and crisp Fenland celery, to seasonal squashes and pumpkins sourced from trusted farms in Cambridgeshire and Lincolnshire.
You’ll also find heritage roots and greens including Bedfordshire beetroots, Wiltshire carrots, and kale, cabbage, and other hearty leaves from specialist growers. Winter favourites such as sprouts, leeks, broccoli, and Jerusalem artichokes feature prominently, alongside Isle of Wight garlic and heritage potatoes from Kent, all selected for their depth of flavour and quality.
Our seafood is sourced from Kingfisher Brixham, who bring day-boat fish daily from Brixham, Newlyn, and Plymouth — from plaice and Dover sole to monkfish, squid, and cuttlefish. We also feature UK Brown Crab, pot-caught along the seabed for its sweet delicacy, and Native Lobster, pot-caught off the UK coast, delivering a rich, sweet flavour at its summer peak.
A highlight of the season is venison from Highland Game, sustainably sourced from over 300 Scottish estates, including Balmoral and Blair Atholl. Naturally lean and rich in protein, iron, and Omega-3s, it’s a true taste of the British countryside and a perfect choice for the colder months.
By working closely with some of the country’s most dedicated growers, farmers, and fishers, Searcys at 116 Pall Mall ensures every dish tells a story of craftsmanship and seasonality.
